The full rack of ribs are an on-the-bone short rib great for smoking. They are very tender, and can be cut to 12” long. If you have seen the Flintstones than you know this cut. It is the large rack of ribs placed on the car tray that tips the car over. This cut is great for serious grilling & smoking enthusiasts and generally only available at special request.
